Having problems getting flavors deep into my pork butt

After I'm done pulling the pork I hit it with vinegar finishing sauce and add plenty of more rub and mix it in.

Pernil Asada Mango Chili Lime Pulled Pork

I wrestled from age 5 through high school.  I wasn't good enough to continue in college and most colleges in California don't have an official program anyway.  I'm confident you are a badass if you wrestled in college.  I recently gave no-gi BJJ a try and being an experienced wrestler really...

    Overnight First-Time Brisket (With Q-View)

Fell into a food coma after eating last night so I didn't get to post the finished products. The ABTs: The brisket: I have some critiques of course, but overall it turned out good and everyone was pleased.  Thanks for watching everyone.

    Overnight First-Time Brisket (With Q-View)

Here's the brisket about 10 hours in or so: Checked the temperature and it was 170.  Wrapped it in foil with a little beef broth for the duration of the cook.  I have some butcher paper coming from Amazon that I plan to use in the future, but today only foil. ABTs, my girlfriend's...

    Overnight First-Time Brisket (With Q-View)

Couldn't make it past 4am.  Slept for four hours and the WSM held it between 235 and 240 the whole time.  I expected to be awakened by the beeps of the thermometer at some point, but it never happened.  Checked out how everything was looking at the 6 hour mark: Unfortunately I don't have a...

    Overnight First-Time Brisket (With Q-View)

I went to the store the other day thinking I would just purchase a flat, as I had never tried smoking brisket and wanted a practice run before doing one for my birthday next month.  Well, the store only had full choice grade packers, no flats.  I decided to take the plunge and picked up a...

    LET'S TALK BRISKET!!

After reading this thread I am a little unclear on checking to see when an entire packer is finished. The general consensus seems to be, conduct a probe test and if it is butter tender it is ready.  However, should the entire brisket be that tender or just the thickest part of the flat...

    Arrghh, membrane on ribs

I remember that conversation being about babybacks at Costco having the membrane already removed. To add to the confusion, I bought a three pack of St. Louis ribs from Costco a month ago and two of the racks had membranes while one didn't.
