Well guys thanks for the comments. I did chicken than pork shoulder and they both came out great. I order the maverick 732 per reading on here. It just arrived and I picked up a 8lb pork butt from my local butcher. He even trimmed it up for me when I told him I was using my PBC. He knew about it...- kenbo21
