Did you wrap and what type of smoker? On my 30" MES Gen II, if i don't wrap, my butts consistenly take 16-20+hrs to come up to 203..... Its one reason i'm switching to wrapping now.

Looks great, i have a couple of questions as a fellow 30" Gen 2 MES. Out of curiosity how long do you think this will take to smoke and do you find that cooking on the bottom racks gives you the best cook?

I was curious what the end of your meat thermocouple looks like. I recognize that silicone covered K-type thermocouple, i use a fluke as well, but I've only run that into the my cabinet for air temp? Does it have stainless probe on the end that we just can't see?
