    @oldschool - I like them this way a lot. Nice bark on the outside and juicy on the inside. I like to alternate between naked and 3/2/1 method for ribs. I've never tried adding a sauce at the end and letting it cake on because I've been so pleased with the results as is

    @dirtsailor - I use a 12" terra cotta diffuser and it keeps temps pretty low. I can easily get it over 300 without one. @themule - very funny. Here we are 3.5 hours in:

    Put a rack of SLC on the Mini-WSM today around 10AM. Going to pull them off at 4, No foil, no spritz, and see how they come out. I forgot to show prep work but I used a basic store bought rub and let it sit overnight in the fridge. I used about 20 Kngsford Original in the chimney and...

    Looming for a charcoal smoker - $200 range

    You could build a mini-wsm for around $100 all in. I have a MES Gen2 electric with amnps and it's awesome to set and forget. I also have the 18" WSM, but my mini is my go to smoker. Plus I had a lot of fun researching and building it!

    Give it a couple weeks to mellow out. You may be pleasantly surprised. I like Todd's idea with the door latch.

    Also with the cold smoker it helps to run it for 30 min and then turn off for 30 min. Then repeat for the full 2 hours. That puts out a lot of smoke.
