I do them about 2 hours, or until the bacon is rendered to your liking.

Best brat recipe I use comes from Cooks Illustrated.  Unfortunately, requires a subscription to their site.

Unless brining, I just put my meats on a half sheet pan and cover with plastic wrap before putting in the fridge.

Requirements for a Next Generation Smoker

Yeah, I knew the minivan thing was a stretch, but I can dream! Backwoods has the advantage of dealers local to me.  I've also been eyeing these: http://www.humphreysbbq.com/smokers/ Humphreys has gotten some rave reviews on other forums. Pitmaker also is most definitely in play, but their...

    humphrey's half pint

Curious to know if you bought one of these. Have been researching vertical charcoal smokers and Humphrey's seems to have some really nice units. If you did buy one, what's your experience? If not, what did you go with instead?

New Guy & Over Injection??? Help!

Cool! I've often oven finished myself. Only problem with that is the powerfully hunger inducing smell it introduces into the house. Glad it worked out for you.

    Herb Marinated Chicken with Qview

Two hours later and it is done. Ready to eat. Perfectly kissed by smoke using the AMNTS on my gas grill. Beautifully flavored by the herb marinade turned sauce. Turns out perfectly smoked chicken doesn't need a tomato based sauce.

Requirements for a Next Generation Smoker

I've been smoking on a WSM 18" for 7 years and not about to give it up, but am planning for a new smoker purchase in the next year.  Asking for opinions and information.   I'm an engineer and tend to think in terms of requirements, so the requirements for my "Next Generation Smoker" (everything...

    Herb Marinated Chicken with Qview

Just popped an herb marinated chicken on the smoker after marinating for 9 hours. Chicken is a Freedom Ranger from Polyface Farms (of Omnivore's Dilemma fame). Freedom Rangers are more reasonably proportioned than factory farm chickens, with excellent dark meat. Perfect for Q. Third time in...

    Absolute Amatuer

Those Pitmaker smokers definitely look pretty sweet. Seem to be more an alternative to a Backwoods style (water) smoker than a Stumps gravity feed, though. Should probbably start a new thread in the Charcoal Smokers forum since I seem to have hijacked this one. To get back to Moon's question...

    Absolute Amatuer

Definitely agree with that. Meadow Creek's list prices are about twice those of a comparable Lang, but include more features and if you have a local dealer you can save on the ship cost for a Lang (which I've read runs about $600). You might also look into Backwoods and Stumps smokers, both of...

    First pork butt Saturday

Looks awesome! Similar to the one I've been using, but yours has the eastern NC creds backing it up. Definitely making this next time I do pork butt. Thanks for sharing!

Looking forward to discussing some excellent BBQ.

Welcome! Looking forward to hearing about your experience with the ABS. I've been contemplating a Lang 48 (currently using a WSM), but have been wondering about the ABS and "The Good One" smokers. Glad you joined.
