    200 person wedding

CTSmoking78, yes, after I thawed the bags in the refrigerator, I tossed the bags in a turkey fryer filled with water.  Once I brought them up to temp, the still sealed bags went in the cooler.  Several hours later, as I was still pulling bags out of the cooler to pull the pork, as I cut the bags...

    200 person wedding

Thank you all for your advice from your years of experience.  We did agree to do the wedding, and I never would have moved forward without all of your input.  Consequently, the wedding went off without a hitch.  We few 250, and got rave reviews.  I smoked the butts over several weekends, vaccuum...

Good morning!    I plan on smoking a Boston Butt in my UDS  this Saturday.  I have always used apple wood chunks for pork and been happy with the results but then I got to thinking;  What type of wood do you fellas suggest for pork butt?  And will it make much of a difference in taste? Thanks...

    200 person wedding

I have been asked to provide the meal for a 200 person outdoor wedding reception.  They want pulled pork (I have only ever done 2 butts) and the necessary sides (slaw, potato salad, beans, mac & cheese).  My wife and I have provided appetizers for friends' weddings in the past, but never...

    New meat

Thanks, Gary. I feel out of place because I'm surrounded by Garys. Is there anyone on here that is not a Gary? Just kidding. I have some spare ribs on my UDS today and I'm using the 321 method. I'll try to post something later.

    New meat

Good morning all. I'm new to the forum and pretty new to smoking. I built a UDS and live in the Midwest. I have had reasonable success with ribs, chicken, and pork butt, but have shied away from brisket because I don't want to ruin it. I look forward to learning from you all as I continue on...
