    First time jerky smoke turned out great. Next time I'll turn the heat down a bit, but all in all I'm happy with how it turned out.

    I've made elk jerky many time in the dehydrator, but today I'm using my smoker. Used an elk tenderloin, in my typical marinade overnight. I'm using a fee chunks of mesquite charcoal and Jack Daniels whiskey barrel chips. 185° going on 1 1/2 hours.

    After 6 hours; shredded, in BBQ and back on the smoker. 2 hours till dinner :-)

    Rubbed down with brown sugar and mustard. Smoking with Applewood chips, should get 8 hours. After which I'll shred, add BBQ and smoke another hour. or two.
