I live in North Baltimore, Maryland, but go back to Alaska every year to fish and smoke. The great thing about vac-packed hot smoked salmon is that it last for well over a year.
I have been to NZ many times and love the food there, but never tried manuka smoked meat. Sounds yummy. Next time I visit I'll look around to see if I can find it. I wonder if it would be good with lamb?
Thanks for your kind comment Leah. By the way, I love canned smoked octopus, or octopus just about anyway I can get it. While visiting Japan my favorite street food is takoyaki, a fritter with octopus in it. Yum!!!!!!!!!!!
