    I make about 60-12” sticks. Using 19 mm collagen casings. Too much to leave in the fridge.

    I do something similar and put them into a paper bag for a day or 2 and they dry back out. I want to mitigate that step and be able to pull from the fridge in Cryo and eat right away like they were fresh made.

    Well the second box arrived yesterday. Now to find homes for the pots and pans. Don’t have enough room for the existing pans plus the Hexclad. How do you guys store yours? Just nested? Or a cloth in between each? The 4.5 l deep sauté and splatter screen were the Black Friday freebies.

    Its too cold here to smoke in the winter so I use my dehydrator for meat sticks. Max temp is 160F so it works out well.

    Canned Jalapeno's Recipe - Hot Sauce and Pickled Done

    Slice jalapeños Bring syrup to a boil Add jalapeños Bring back to a boil and remove from heat. Add strained jalapeños to jars. Pack them in. Bring liquid back to a boil for 5 mins. Pour reduced syrup into jars and seal. Leave for 3 weeks. Use remaining syrup to make jalapeno jelly.
