    Need Hot Link help please!

Thanks diesel. I figured it was a lack of Paprika, I thought the cayenne would do the trick, guess not. I will try a tablespoon to the next batch. I did a taster before stuffing, and the flavor was great, the flavor is still great, just missing that beautiful hot link color. I will report back...

    Need Hot Link help please!

Hey guys, I tried my first go at hot links. I used a pretty standard recipe with cure #1 and smoked at 150-185 for about 2 hours, until the IT was ~154. These guys have a great personality because they are butt ugly, but taste so delicious. Any insight as to why they came out not looking like...

Beef Jerky: Ten Pounds, Two Types (with Pics)

Looks good. Just out of curiosity, why use so much sodium/ soy sauce and Worcestershire sauce if you are using nitrites? Do you not get a upfront soy sauce flavor?

    SMOKIN-IT SMOKER

I sprung for the Auber PID since my model 3 took almost 6 hours to cook 3 racks of baby back ribs while set at 250 :( oh well the Auber should serve me well. I don't have a problem with temp other than the constant swings when I smoke something small but I want to be able to fully load this...

I know there are swings and I can handle some variation but it looks like people are having a hard time even getting the smoker part the low 200's. I'm kinda freaking out now. Can someone give me...

    A low "hot smoke"

Hey guys. I have a 22.5 WSM and have been smoking bacon for awhile now. I do a pretty low hot smoke, somewhere between 90-100 with great results. I feel it gives me best of both worlds. Thoughts? Here is what I just put on the smoker. I'll pull it around 120.
