Well today I managed to keep the AMPS burning for 12 hours on my first try at bacon. So I guess that's progress. Still lots to learn but thanks to your help I am starting to get some confidence. Thanks again for your help.

Interested in how long/temp you ended up smoking your Belly Bacon. On my first go and not sure which way to go or how long with the smoke. Your bacon looks great! Mine comes out of a dry cure tomorrow so smoking in a couple days.

Don't give up yet. I went for a MES too and have struggled with smoke. I am still getting the hang of it. I feel like I am nearly there with the smoke. I have a little kettle BBQ instead of a mailbox. I'm sure you have read it before but the combination that ended up working for me...
So you don't put them in brine first? Sorry for the dumb question but I am new to all this. I do some great mar lands with Cajun spices in the oven but thinking I could now use a similar approach but add smoke into the equation

Thanks Chuck, I'm progressing. Think I have suffered from moisture but getting on top of that, feel like I need to get the draft sorted. I've been reading a lot of posts but want to make sure I have it down pat before setting to keen. Walk before I run so to speak.
