That's the problem, I don't know how long they were in the danger zone. I doubt they were bad also, but I didn't want to take any chances. The baby backs were awesome, so it's all good.

These are on my menu for my husband's birthday dinner today. Being a newbie, I don't have an extra rack available in the smoker to smoke them, so they will have to go in the oven.
It has a cord, and it is coated in plastic. It says it can stay in the smoker, as long as the cord is not crimped. I wasn't sure I believed that, but it's the best they had.

I am having trouble getting it any hotter than 200. I have the gas all the way up, it's not very cold here (60 maybe?) and little to no wind. Should I let the water run dry?
