    Yup. The only time I close it is to snuff it out after I'm done smoking for the day. There was a solid plume of steam coming out of the top vent the entire time there was water in the pan.

    The only water that got into the lower bowl was in the form of steam condensation that ran down the walls and into the bottom of the bowl, that I can see.

    I've found that my18.5 WSM seems to hold temp very well even without any Atc. I too upgraded from a Chargriller to the WSM. I have only added the seal Kit to the lid and door but I am for sure getting a hinge kit asap too. Can't believe I waited this long to go Weber!

    Love my 18.5 WSM. I take ours camping with us and I wanted something that didn't take up a ton of room under the tonneau cover of the pickup and the 18.5 fits great by still gives me enough room for most everything I cook.

    Looks tasty. Any truth to not smoking fish and other meats in the same smoker? I've been told you shouldn't smoke fish in a smoker used for other meats or the other meats will end up with a fishy taste.

    You won't be disappointed. I drug my feet not wanting to pay the big money for Weber stuff and I'm so kicking my own ass for doing that now. My WSM worked so good this past weekend that I can finally smoke the proper way, not babysitting the damn thing all day!

    3 (2)- 2-1 no more

    Man, I don't know about all this. The noises the woman makes while eating my 2-2-1 ribs is hard to move away from. I use to do them unfoiled but since I started doing them foiled/2-2-1 style, she begs me to not mess with them. I think I'll do one rack each way next time and have a direct comparison.

    First smoke on my 18.5 WSM this past weekend. Two 10' butts. Both were awesome. I didn't put anything in the water pan but foil to keep it clean.
