    Wife brought home a 15 pound Boston butt from sams

    I use dry chips and put a couple of decent apple wood chunks that I do soak in each round. Seems to take the smoke session longer. Smoke Hollow electric.

    You can stop at 198. I've done two butts to just below 200 and they fell apart beautifully when pulled. Also, the first one I rested for only 30 minutes and it was the same as the one I rested 2 hours. Go eat man!

    Just discovered a time saver...

    I just put the plastic wrapped meat on a cookie sheet then in the fridge. Whatever leaks stays in the pan.
