They were but when I was taking them off, I had a flare up. I had some water in the pan and it dried out and the drippings caught on fire and couldn't snuff it out or get them out quick enough. Honestly, with the carbon off. The meat was great. Too bad half of them turned out that way

I've heard to go a little higher on temp. I've seen 250-275 or 275-300.
I've also heard go with a sand filled pan or no pan at all.
I added a ball valve to the base. Cut out the bottom of the pan and added a weber grate for ash. Added a lid vent. Added a nipple valve also to the base.
