Some quick smoked chicken thighs, sticks, and ABT's

I threw together some quick thighs and sticks, and thought, why not add some ABT's ??? Made two mistakes however, didn't add a water bowl, and didn't take out the done ones while waiting on the thicker pieces.  They were still delicious. The ABT's had Cheddar cheese, or Monterrey Jack, with...

    New to smoking.

Welcome Horse! This is an awesome smoking forum for any animal you can think of!  I'm especially fond of Bearcarver's step by step instructions.  He selflessly gives, as so many of this forum does, of his own experience and successes.  There are more ideas and experience here than anywhere I've...

    Collaboration of homemade TX Sausage

That is really good info, thanks JJ....I erred on the side of caution since I know he puts pork and beef into these sausages, I wasn't really sure how long to do them, so I waited until they looked done (about 2 hrs @ 250) and took a reading with a probe, and it went to 180 and pulled 'em off...

    Cheese steak fattie

Fantastic, what a brilliant use of a smoker.  I love the philly cheesteak......must make smoked philly fattie! Did you get enough smoke with the bottom and sides covered?  What about wrapping the a ss mesh?  Or can't go wrong with the bacon, at least from the flavor perspective, I don't know...

Follow up Pork Picnic with Qview!

Thanks!  Yeah the Picnic's come with the skin on and big chunk of fat under.  I cut that off prior to smoking, but still left some fat on it.  It worked out perfectly.
