    I checked it at 230 when I woke up and the smoker was running just under 200 so I gave it a little air. When I checked it at 6 it was running a tickle hotter than I wanted at 250 or so. Looking good son far though.

    I don’t do a lot of briskets but a friend has some family in town and asked me to smoke them a brisket. They picked up a flat when I wanted a packer so I had the mrs get me a packer. I want it to turn out well and I struggle to keep the flats from getting dry so I will keep the flat for myself...

    Get the new Weber summit. I bit the builet and love it. I now have a Weber kettle, wsm, and the summit. The summit can go low and slow and also bake a pizza. The thing is amazing.

    The money shots. Turned out pretty well but could have used another hour on the smoker. The troops were getting restless and it was time to pull at 190 regardless of IT.

    Well for the last 2.5 hours the temperature hasn't moved. So far this thing is a dream. Actually easier to control thus far than my wsm. A little breezy here in Wisconsin so I am very pleased.

    This new summit charcoal came with the big tires in back and caster in the front. It is super nice for moving it around. With it being double walled it has been holding temps very well with me playing with it to get the temp I want. Over time I will learn the thing and it will get quicker but...
