Just wanted to ask how good is chokecherry vs cherry?? I just got a bunch of it from a tree surgeon. I hope that is what it is. Regular Cherry wood is Red and chokecherry is not. Here is pics of it.
I just put the nomex tape on the ash pan of my akorn. Its no longer white now lol.
Here is my question, it did this even before i added nomex. Why do i have moisture/water build up in ash pan??? It does come out between ash pan and main housing. Now nomex is black.

Trying to work on it for comps. I know you really dont need to turn in a box with skin to win, but im just trying. I scrapped skin and all it was soft but you could bite through it.
So I did my chicken today, chicken was done but skin was not crisp. Smoked it at 270 for 1.5 hrs until internal temp was 165... Skin shrunk on some and was not crisp. This was on my offset smoker. Should i have moved them closer to firebox side????

At 250 set the akorn will go between 235 and 260 according to my 2 seperate probes and oven thermometer.
