    Today's Smoke - Master Forge Vertical 36"

After a couple of months of smoking every week or two, I finally hit it right today.  I kept having issues with the temperature going too high, and was finding myself adding ice to the water bowl, opening the door, closing the bottom damper (I installed this, see here), or taking the unit...

    First Butt smoke

Decided not to wrap it, so I'd get the awesome bark you see below.  And here's the finished product off the grill: I foiled, toweled, and let it set in the cooler for an hour, then picked it.  Soaked in some of the sauce I made (see earlier post above), and it was awesome!!!  I always a loved...

    First Butt smoke

I just wish Food Lion had more, I got their last one Thursday.  I'll go back before the sale ends Wednesday and see if I get a couple to throw in the freezer.  Hard to beat at that price.

Thanks for the info Bill.  I like the bark.  I'll get the wireless thermometer going soon and see how the stall goes.

    First Butt smoke

2.5 hours into the smoke; looks & smells great!  Gotta find some AAA batteries so I can try out my new wireless thermometer.  With the mods I did to the smoker, I'm able to hold the temp right around 225.  It initially spiked to 325, but I adjusted bottom damper and added some ice to the water...

    First Butt smoke

So Food Lion had Boston Butts this week for .99/lb.  I got the last one Thursday, a 7 lb'er.  Rubbed her Thursday night, injected a little apple juice/soy sauce, wrapped it plastic wrap, and I'm putting it on this morning.  Here she is sitting in the aluminum pan, about to go on. My question...

New smoker mods -- Pics Included

I think that might have been a problem for me on the test burn.  I started with nearly a full Weber chimney of hot coals.  I'll be working on the air-tight seal of the lid to the body this week.  I have to lower the top grate supports as mentioned above (only about 1/4"), and maybe add some...

Stan: Yes, I already have one of the Weber 7440 grates to use as a charcoal rack.  I like your idea though, and will use that material if I need to build the charcoal basket up any higher for increased volume. Dave: I've read up on minion, and will try that when I fire it up this weekend.  I...

New smoker mods -- Pics Included

Hi Stan, Good call on the top rack mount, I just checked and my lid contacts those before the lip of the lid hits the body.  I'll drop the rack mounts and cover the original holes with metal tape.  I used hot (nearly boiling) water in the pan on my test burn.  I think I'll start with room temp...

    Hello from Maryland's Eastern Shore!

I started a thread with the mods & pics...looking forward to any and all feedback.  One thing that surprised me was there was no problem holding temp.  Seemed like a lot of the comments I've read about this smoker noted that folks had a hard time keeping the temp up...I had just the opposite. ...

New smoker mods -- Pics Included

Okay, so after several hours of test-burn, I'm running a little hot.  About 300-325, with bottom damper just about closed up.  Any suggestions for pulling this down into mid-200s?  Will the insulating rope around the lid help with that (limiting air-flow)? Thanks for any suggestions & feedback...

New smoker mods -- Pics Included

Today was smoker assembly day.  I picked up my new Master Forge 36" Vertical smoker on closeout at Lowes earlier this week, and spent several days doing some research on mods.  The supplies I picked up included: Stainless steel fasteners (screws in two lengths, washers, lock washers, nuts, small...
