Not sure what happened to my post with the pics. Anyway, I thought they came out pretty good and received many compliments. More tug than 2-2-1 method. I used 50-50 apple and hickory. I think I'll do 100% hickory next time to get more smoke flavor. Here goes:

As promised, back to post the results and some pics. I thought the ribs definitely had a little more pull to them vs. 2-2-1. This is only my second time smoking BB's on my new MES 30". The first time around, I topped adding chips after the first two hours and definitely wanted more smoke...
Wanted to change things up and experiment so I decided to try making some BB's 3-1-1. Testing to see how it affects the bark, if at all. Going at 225. I'll post pics and a review after they're done. Anyone else ever try this? If so, what were the results?
I've always loved grilling and finally got my first electric smoker, the MES 30", a few weeks ago. Started out with chicken wings then baby backs last weekend, Stepped it up yesterday with a 4 lb pork butt. A local butcher shop has top notch meat and this butt was no exception, beautiful...
Thanks for the replies, put me at ease! Put it in smoker right at 10a. Will definitely post pics when it's done. I also plan on making some BDSE to finish it off.
