I think your doing ok. Im not a pro I do is simply because I love it. Remember slow and low thats what you want. I just done 8 butts and it took me three and a half days but I was only smoking two butts per smoking session at the above temps and times on my previous posts.I only have a Bradley...
I put mine in between 225 and 235 smoked it for 12 to 13-hrs. Internal temp got to about 170 to 180 then I wrapped them in foil until the temp got to 200 I took them out and they came out great.
I got one of the recipes that was on the fourm. It turned out really well. We're not going to eat these pork butts until Thursday so they should be really seasoned because of it sitting in the refrigerator.
