It's just a 250 with a 310cc stroke but it screams. Them 500's are rediculise for where I ride(and it's nice here in Texas)!!!!! Here is a little better pic.
Ok best damn chicken I ever had. Came out perfect and I crisped up the skin with my wife's cooking torch. The sausage was awesome also. Smoked some corn, and made some red potatoes with oregano, basil, parsley, butter,and limon.. Got a little buzz going from some cherry moonshine and sprite also.
Hey guys put the chicken and Cornish hens in the brine last night around one am, took them out at about 3 pm today put my run on and stuffed them with lemon cilantro onion and dress basil and oregano. Hope fully they turn out good. I also put my sausage on.

I haven't checked the temps on each rack yet just the one I been cooking on. But it's about 15* diffrent so if I set it to 210* It will be about 225*.
The pork butt finished at about 1030. I stuck a fork in it and rotated about 360 degrees with Hardley no effort!!!!
Put the ribs on also.
