    I like a combination of Mesquite and Hickory(70/30) for brisket and I always try to keep the temp at 225 and plan for 1.5 hours per pound.

    Yes, it will all fit and I should have plenty of fuel for a very long smoke. I am a bit short on temp probes so I will have to use instant probes to read temp with just two continuous monitoring temp probes. But I think I can manage.

    Looks good. But I always like to pull mine at 130-135 and then throw over the coals for a couple minutes per side to get a good sear on it. Tri-tip is very good for reverse searing.

    If I were you, I would start it at least 4 hours earlier, maybe even 6. You can always let it rest a bit longer if it gets done too early.

    I just did this myself. I had the smoker at 225 and smoked the burgers for about 50-60 minutes and then seared them over the grill for a minute per side. Search Reverse Sear in here and you will find lots of info about this method. FYI, the burgers were awesome! the wife loved them and said...
