    Safe to eat?

Thanks. I don't know how long ago the bag seal broke, but I am going to take it back and try to exchange it.

    Safe to eat?

Just the fridge. The "sell by" date is the 20th, and since the store keeps them unfrozen, I assumed I would, also.

    Safe to eat?

We bought a brisket about a week and a half ago, it says to use by Dec 20th. Today I noticed the bag wasn't sealed and a little air has gotten it, and it's turned brown. I know oxidization itself is fine, but since briskets are vacuum sealed, I'm not sure how safe this is to eat. Would you eat...

Lots of questions about our new smoker

Sorry for another post - I'm mainly documenting this for anyone else having this same issue with this smoker (and I've seen it a lot) This is the spreadsheet I kept of temperatures while I did my testing. I did a second run without the blanket and got the same results as the first run.

    1st brisket screw up prevention

So, the husband and I are cooking our first brisket this weekend. Ive been reading, but there is so much conflicting information, and it's spread out -  most posts seem to focus on one specific area (prep, slicing, etc) and I'm not sure how much in interchangeable, so I am hoping to get some...

Lots of questions about our new smoker

Thanks! What I meant by temp drop was, I assume added mass would affect the temperature. I left it on medium for about an hour, and it stayed about 250, which is a lot better than when we used the pan and were getting 200 on high. I just turned it to low, to see where the temps go with the vent...

Lots of questions about our new smoker

The walls are pretty thin on it, so I have a feeling the blanket is going to be a big help, but if I can get away with not using it, I'd return it and get my $30 back. How much can I reasonably expect the temperature to drop once I add meat? Should I be doing the dry runs with chips smoking...

Lots of questions about our new smoker

I know this is all over the place, but I added the water pan back in, and closed the vents. With no water, on high, temps jumped to 325. From here on out, I will do all my testing with the water pan on the bottom shelf (today anyway) because as I said before, we just feel more comfortable with...

Lots of questions about our new smoker

Thanks, will try that after I give it a half hour to see if removing the water pan helps, but being new to this, we feel much more comfortable with water in there. I added a picture to the first post of the grate.

Also, with the water pan, on high, its holding about 225. I took the water pan out just now, to see if the temps go way up. This is the grate I made for the lava rocks.

Lots of questions about our new smoker

Hi - everything we've read says to keep the top vents open. There are no side or bottom vents, just the top one. The tank is fully open, and we've double checked the safety isn't tripped. There is no gap at all with the original pan. There is NOW that I am using the box I made out of expanded...
