I am in a quandary. I picked up a Victory VF-1 Commercial Freezer for free. I was told it no longer worked. The original idea was to convert it into a smoker as a project. I am a recreational smoker and clearly don't need anything this big (I already have MES 30).
They threw in 8 stainless...

Looking for ideas for creating a charcoal ring of sorts in order to perform longer cooks and to also have opportunity for indirect heating. I also want to keep the charcoal off the sides of the kettle since I have heard...
Looking for ideas for creating a charcoal ring of sorts in order to perform longer cooks and to also have opportunity for indirect heating. I also want to keep the charcoal off the sides of the kettle since I have heard this is not ideal.
I don't have access to a welder or expanded steel, so...
I suppose this will just have to work until Todd gets his Amazen Matz on the site. I suppose the new non-stick foil would work the same way.
Accordion (fan) fold a piece of parchment paper (or non-stick foil) and then use a hole punch to punch the desired amount of holes. Unfold and put on...
Looking for flat top griddle to place on grill. Steaks, bacon, hanburgers... Was thinking of just a sheet or something like this...thoughts? http://www.amazon.com/gp/product/B000HQHBSQ/?tag=smokingmeatforums-20. What do you think?
Is 2-3 days to long to brine a 5-6 lb loin? Cooking on Saturday. Usual brine with kosher salt and brown sugar in fridge in 5 gal bucket and ice water bath. Prob add rosemary and other spices too.
I thawed out the other day and it's in the fridge. Worried it being thawed too long.
Thanks!
OK, I've taken the leap so to speak and trying my 1st Brisket.
I bought a 10.5 lb brisket (full packer) from our local meat market ($3.15/lb for Choice and cheaper by far than WalMart at $4.78 for a trimmed 4lb cut ???). Because I am still a bit scared I cut it half and froze the other half...
I've been smoking for a couple of months now and a bit obsessed with it. I have surfed this forum extensively to ensure I can turn out the best meals I can on my MES 30.
I came up with the following 11 Commandments that apply to my MES and are generally appropriate for all smokers. I'm sure...
I want to try sausage bou not ready for grinder, stuffer, etc. Was thinking about getting som ground pork (80/20) and settingup several small batches to test
I've been thinking about a mod for a MES 30/40 that would involve a standard rotisserie. Seems simple enough. Drill holes on either side ensuring that they are effectively level or can be made level with leg adjustments, etc. Install some sort of threaded insert that could be RTV'd on either...

Here is what I am thinking....
I have one of those KitchenAid mixers. Don't have a grinder attachment (yet). Do they have a "stuffer" attachment (I think they do and it might be a package deal)?
I'd like to start by buying a basic pre-ground sausage mix (chub) that is basically ground pork...
OK, so is going to be a beautiful day tomorrow in NE TN and I have to get my smoke on!
This is what I'm thinking about....
4 each of Thighs, Drumsticks and Wings sitting in a brine until tomorrow AM.
Thighs will then be marinated in an Italian dressing, garlic salt, poultry seasoning, OJ...
Well my wife has had enough of the smoking in the MES 30, so pulling a fast one by cooking a beer butt chicken in my trusty Weber Grill. I had bought a bunch of chips before I got the amazing AMZNPS so I need to use those up. So, I have a foil chip pouch with apple and cherry back on the heat...
I've smoked a few times with the ET-73 and noticed an issue with the range as well. Doesn't seem to want to go 100 feet. Thinking the double paned thermo glass windows are having an effect.

Amazing Price. Check it out. This and AMZNPS and a Remote Temp Probe is a match made in ... well you know.

Everything you would need.
I brined since Monday PM. Alton Brown's Brine Recipe. On Wednesday AM, I removed from brine and let the skin dry out. On Wednesday PM I coated the turkey in a slurry that included italian dressing, kosher salt, parsley, red wine vinegar, among other things (put all in an oven bag) and let sit...
Bought a 20lb bag of Traeger Pecan Pellets from Amazon. From the size of the bag and the packaging, I'm concerned that these pellets were not the right ones for the AMZNPS and my MES for smoking a turkey tomorrow. I have Cherry and Apple if I messed up.
Can I use them????
On the menu this weekend....

Day 1 - Continued - Tex Mex Chili - 1 Lb Hamburger Meat, 1 lb pulled pork, 1 lb Chorizo sausage and pan seared tenderloin. Everything but the tenderloin to cook in the MES 30 under Mesquite pellets in the...
