    Jeff's Smoked Chicken Cordon Bleu

Got Jeff's email earlier in the week and decided to attempt this over the weekend.  WOW did this come out great!  Simple, straight-forward, and a quick smoke.....I'll definitely be making this again. I substituted provolone for the swiss cheese, but I'll probably try swiss next time as it has a...

Pork Shoulder Picnic - first attempt

My thoughts exactly! With a long smoke like this, I'm not feeling so bad about letting it go by itself overnight. Thanks! I just used Jeff's dry rub. I've had good success with it so far.

Pork Shoulder Picnic - first attempt

Got the skin off and the shoulder trimmed up. Warmed up the smoker and got the AMNPS lit and smoking. Rubbed the shoulder down and threw it in at ~7:45 pm. Here's where we're at: I'm keeping an eye on the thin blue smoke and I'll throw the meat probe in before I go to bed and set the...

Pork Shoulder Picnic - first attempt

Awesome...thanks for the tips everyone! I'll be dropping the hunk o' meat in the smoker tonight and will probably update this thread with pics throughout the process. Hoping for some good pulled pork!

Pork Shoulder Picnic - first attempt

After my semi-recent successful brisket, I'm going to attempt a Pork Shoulder Picnic. Last week, I picked up a 12.17 lb picnic and am planning to smoke it overnight.  Now, I know there's not a set time this will take.  But, if I was ball-parking dinner tomorrow evening around 6 pm, would it be...

    Brisket - 2nd attempt - SUCCESS (& q-view)!

Some of you folks may remember my semi-recent thread about my first brisket, botched attempt.  With more reading and some lessons learned, I gave it another try yesterday.  Also, I got to try out Todd's AMNPS that I got for Christmas.  I'll have to play around with it some more, but I...
