    Curious to see how the gasket works out for you.  I know some rec tec owners had issues achieving temps over 400 deg when they installed the seal, probably due to lack of air flow.  Personally i wouldnt worry about a little smoke coming from the lid.

    At least in my neck of the woods, Sams has a larger meat selection while Costco generally has a higher quality product.  Sams is owned by Walmart which is reason enough for me to avoid it.

    They are going to try and get it shipped out Monday and they said it should take no more than 5 days from there.  I travel a lot for work and Friday's are the best day for me to receive it, so hopefully next Friday or the following Friday.

    With tri tip it is very important to cut against the grain for tenderness. The grain does not run the same way through the whole piece of meat.  Here is a good illustration of the grain direction.
