I have a Brinkman electric smoker. I bought an actual old smokey temp gauge and installed it today and ran it to check temps. It runs at 325 to 350. Is it important to run at 350 the first hour and then figure out a way to scale it down like a damper or would this work...

My name is James. Im new to smoking. I had some extra time on my hands this summer and bought an el-cheapo $30 brinkmann at Wal-Mart. Im trying to see what i can do with this smoker until I can afford a better one as I am enjoying it so far. Its just overcoming the limitations of the smoker I have.
also I dont have a way to regulate the heat. If it gets up to 350 Ill be all set but will have to make and install a damper in the lid to open to get the temp down some if its too high. Im going to try a small damper with 4 1" holes but will have to experiment before cooking meat in it to see...
