Well finally fired up my smoker and have learned quite a bit. 1 my fire box doesnt have enough air flow and lump coal and chucks dont provide enough heat on my current setup. I have had ti resort to a "forced air" method by using a fan to add the necessary air to get and stay at temp. BUT IM...

New to the smoking thing and found this site after building my own offset smoker. The only things I know are what I have seen on TV and that's not much. I have tried cooking on the grill low and slow with decent results but never tried smoke. Here in Chicago you can find a lot of good food...
