It will be interesting to see how well your second PB works considering how large the house is. I have heard in the past that (at least for hot smoking) the firebox would need to be at least a 1/3 the size of the smoking chamber.

Fantastic! Definitely interested in seeing the finished product. I love the idea of having a portable smokehouse so I am curious as to how you plan to heat the house. The same stove you have been using to test it out?

I'm going to be smoking a whole top round tomorrow. I have it marinading right now so it will be ready for the morning. My question to everyone is, what's an approximate time? It's just shy of 22# and I'll be cooking it at about 220 degrees.

I do want the propane side to be able to use independently when needed. Essentially, two separate grills that I could combine if I needed to smoke a whole animal.

I have been thinking about building a third smoker; first was an offset, second was a UDS.
Well, now I want to build this thing...except out of oil drums.
The main reason(s) I want to do this is because I would like to have propane...
I would really like to start participating in competitions but I am no where near ready for big ones. Would any guys want to get together and have our own or know of one that I could sign up for?
I was blessed for over 100 pounds of ribs to cook for my college's homecoming this weekend. However, I only have a couple UDS' to do the job so I have limited amount of space. Would it be blasphemous to cut the ribs up and put them in a aluminum tray and smoke them like that? Any tips?
