    Dad Jokes

Q: Why was 6 afraid of 5? A: Because 5 was a registered 6 offender, and THERE'S NOTHING FUNNY ABOUT THAT!

    Reverse plate thickness

I'm using 3/8" for mine. Given that half the purpose is to spread the heat and even it out (both in space and in time), it seems like thicker would be better.

RF Build: A Story in Pictures

A bit more progress: I got one of the leg assemblies done. I need to build a second identical assembly, then tie them together with spars (which will run parallel to the long axis of the smoker; in this picture, they'd be coming straight up at the viewer); the "doghouse" shapes sit on the ends...

    Cajun Custom Cookers

A track burner or CNC plasma cutter with a tilt head can cut a bevel just as easily as a square cut. Bingo: prepped joint.

RF Build: A Story in Pictures

Alright, so the legs. This was about a year ago, a week or two after I drilled the plates, but somehow, the post disappeared. I'm building this with a 24" barrel, but I wanted a wider base for stability; I settled on 36" wide. Obviously, that means some splay. To make the leg-barrel...

RF Build: A Story in Pictures

So, almost a year later, a small update: I did end up getting the legs cut, but somehow never posted an update, and can't find the pictures, so I'll fill in more about that tomorrow. I've been very busy with various other things, and the extension cord I use to run my grinders went walkabout...

Tonight's Dinner: First Attempt at Ribs w/ Jeff's Rub

Final: Not quite as tender as I might have liked, and about half-an-hour past my target time, but certainly tasty enough. I really need to finish my smoker project and start using something that'll hold a temperature.

Tonight's Dinner: First Attempt at Ribs w/ Jeff's Rub

Out of wrap after two more hours; IT of about 150°. Definitely not even close to tender. In the oven trying to salvage them. <grumble>

Tonight's Dinner: First Attempt at Ribs w/ Jeff's Rub

T+3hr. After looking stable at 240°, temp fell to 200°; apparently, I choked it off more than I thought. Checked internal temperature; 129°. Pulled from grill, wrapped, put back on at about 240°. Lighting has changed; the sun is now behind the house (you can see the shadow encroaching on the...

Tonight's Dinner: First Attempt at Ribs w/ Jeff's Rub

T+2hr; temp had fallen to 215°, and most of the charcoal was consumed (though still plenty of wood), so I added a few more lumps and closed everything back up. Temp stabilized at 240°.

Tonight's Dinner: First Attempt at Ribs w/ Jeff's Rub

T+1hr on smoke; wood is hickory. Temperature came down to 275 shortly after the last picture, and has slowly declined to 255° with the bottom vent fully closed and the top vent open only enough to get a thermometer probe through it. Vent (and thermometer) is on the meat side of the grill, not...

Tonight's Dinner: First Attempt at Ribs w/ Jeff's Rub

No binder, just the rub. I was planning to wrap with parchment paper (uncoated, same stuff I use for baking). I'll try to get the temp down, but it's hard to control that thing as precisely as I might like, so I'm just going to have to play it by ear. It shot up to 450° to start with, but I...

Tonight's Dinner: First Attempt at Ribs w/ Jeff's Rub

My local Sam's Club had ribs at $2/lb today, so I picked up a couple of racks. One I vacuum-packed and sent directly to the freezer; I just rubbed the other with Jeff's rub and am about the start the grill. I just have a Weber kettle at the moment, so I'm going to try my best for 3/2/1 @...

Looking for a new set of knifes

This. I love my Dexters. I don't know if they sell a set; I bought mine piecemeal. And I prefer the 10" chef's knife to the 8".

    Freight train tanker car build

I've had the same thought many times; moreover, there's a factory up the street a few miles that has both the pipe and the endcaps. I suspect it would turn out so big as to be impossible to maintain consistent temperatures, not to mention taking hours to load (and think of the counterweight...
