In the latest newsletter Jeff uses Bradley Racks for the spiral cut smoked hot dogs. Not knowing what Bradley Racks are, I did a google search and see that they're a mesh rack for the Bradley smokers. I have an MES 40 but like the look of the mesh for certain applications -- especially the...
Melt in your mouth deliciousness! In fact when we were all full there were a few left over. Before we could get them put away we ended up finishing them for dessert :-) Yummy stuff!
It's a very heavy-duty extension cord.
The ribs were in the smoker for about 45 minutes but I think it was already off before they went in just not sure. My son was bbq master while I ran to the store for apple juice. When I got home the smoker was pretty much cold and the ribs didn't look...
I ran into some trouble with my electric outlet when using my Analog MES 30. Now I'm not sure just how long they were cooking before the power went out. I've got it going again with an extension cord but is there a way to tell when to foil them based on looks, feel, temp?
Thanks!
Debbie
Yes, my unit has the temp control that looks like an electric fry pan controller.
I have about 1/2" hole in the bottom for grease collection but the drip pan goes underneath so I'm not sure how much O2 that lets in. Then in the back is another 1/2" or so hole. That's it for ventilation...
I'm planning to do BBs for dinner tonight. Since I'm having company I want to serve at a specific time. After reading a lot of posts on 2-2-1 for BBs and needing to adjust based on how my cooker's cooking it sounds like I need to be prepared for anything from 4 to 5 hours. If I start with the...
OK. So, I'm a relative newbie at smoking but am definitely hooked. So much so that I think I'm going to be buying a second smoker. My first (and only) smoker is an MES30 analog. It is sitting on my deck at home. And here I am at my weekend place with 8 lbs. of prepped/marinated beef ready...
Actually, my MES30 is an analog model and does not have anywhere near that fancy of a chip tray. It's just a 1 1/2 " to 2" deep tray with a cover. It fits into the bottom rack alongside the water pan. Sorry, can't take pics since I'm at my weekend place and not at home...
Which leads me to...
Hi all. I have an MES 30 and seem to have a lot of problems maintaining any smoke at temps under 250 or so. I've tried soaking the chips as well as dry chips but I just don't seem to be able to get a consistent flow of smoke going. That's all fine for jerky since I don't want that to be too...
It was forecast to be a rainy and chilly weekend in upstate NY so I decided to do some sausage making. I'm very much a novice, only having made Italian & breakfast sausage previously. So I settled on 6 recipes, bought 30+ lbs. of pork, 4 lbs. of chicken, and made sure I had all the spices I...
I have an analog MES 30 so it's pretty hard to set the temp but I have found that the cabinet temp measured with a Maverick 732 is far different than what the thermometer on the unit indicates.
I introduced my smoke at the start thinking it would get into the meat better when the meat was...
