    First summer sausage try

After doing quite a bit of reading on summer sausage, I have a couple questions.     Both the chart on Susan Minor's curing salt chart (http://www.susanminor.org/forums/showthread.php?736-Curing-Salts) and the Morton Salt web site say to use 1 1/2 teaspoon per pound of meat.    But a lot of the...

    Hints for first smoked chicken

I use ziplock bags, gallon size, when I brine a chicken.     Sit it in a bowl or plastic dishpan in the fridge.    Salt needs to be adjusted according to the amount of time you have it in brine.    Longer time equals less salt, etc.    I usually use about 1/3 cup of tenderquick salt to enough...

    jerky

Thanks for the response.    I appreciate the info. I did some ground beef and some round steak.    I did put water in the pan, didn't seem to make much difference.    I do think I will make some changes before I try again.    I think I will cut the meat into strips after it comes off the...

    jerky

Have some beef and some ground beef marinating to smoke tomorrow.    I am using an MES 30.    I don't know what to do about the water pan.   I know if I put water in the pan, the meat will not dry as well.    If I leave the pan out, the heat will fluctuate quite a bit.    I thought about lining...

    Cheese experiment with 30" MES

Thank you for your advice.   I do think an AMNS or an AMNPS is in the future.    Saw some good prices on them today.    Actually, the cheese turned out the best of any I have done.    But did it on the charcoal smoker as the coals were burning out after smoking something else.      I started it...

    Cheese experiment with 30" MES

Wanted to see at what temperature I could get smoke from the MES.    Started at 125 with no luck, then tried 150, still not much, went to 175 and had plenty of smoke.    Cut back to 165 and had good smoke from the cherry chips.   Did 2 lbs of pepper jack.     I know it is really too hot for...

    SMOKER CLEANING

I line the water pan and drip pan with foil.   And soak the chrome racks in warm soapy water.    A friend said to wipe down the walls, but doesn't sound like a good idea.   Glad you all said I was right.

    Hello from South Texas

I just got it on Wednesday afternoon and seasoned it yesterday.     Today I put in some store-bought sausages to check it out.   So far it is doing quite well.    Everything went as expected.    I had pretty even heat and good smoke.    I was surprised at how long the chips lasted after the...

    Hello from South Texas

Called Walmart to check yesterday on the MES.    They said it is somewhere on a truck, they don't know where.    So, canceled the order so they could send one quicker.    Supposed to be here tomorrow.    We will see!!

    Hello from South Texas

Well, Walmart is now telling me that the smoker is delayed.    Should have been here by now, has been trying to cover last 300 miles for 5 days.    They say it should be here on the 20th now, but I am not convinced.    Even found a brisket and some salmon to smoker.

    Hello from South Texas

"Welcome aboard where in South Texas are you from...I originally am from Freer Texas." Thank you for all the kind welcoming words.  We retired and moved to the Rio Grande Valley about 10 yrs. ago.     We really enjoy it here.

    Hello from South Texas

I have already found a lot of useful information in the forum.    I have been smoking meat for a few years and just bought my 4th smoker.    I started with a little charcoal one which didn't have a way to get air to the coals so they didn't burn.   Then a small bullet electric, which did okay...
