    Maybe I had too much salt. I do not think I had 4 liters of water. And I only smoked 1 lbs. of salmon. But I did rinse it twice.

    OK Guys, I did a wet brine today. I followed Thirdeyes recommendations. I used the brine - 1 cup of salt, 2 cups soy Sause, 1/2 cup of brown sugar and white sugar. 5 hours later I rinsed the salmon and put in a bag. This morning I smoked it. Wow, is it salty. What did I do wrong?

    How about the interior of the mug? Is it anodized ? Would the pellets burning (smoking) burn off the anodize coating? And is the coating burning off, dangerous? I come across different points of view. It is just that I am using high levels of oxygen.
