    If the fish smell in your smoker is stronger than the "smoke" smell than something is WRONG.

    Usually when I pull it off of the smoker I'll slice some for the complete taste test.  But it does slice easier after setting and chilling for a while.

    I've made bacon out of fresh bellies.  You'd never be able to tell the difference because of the way the cure changes the texture of the meat.
