    Masterbuilt Grill for Smoking?

i'm checking out the masterbuilt barrel smoker.  i wont be making any mods to whatever i get.  on this masterbuilt, it looked like the firebox was kind of small, but you could put a layer of charcoal in the main area also.  in the firebox on the side, it looks like the charcoal goes on the grate...

    Resting your meat?

and if you goof and your turkey is a little overcooked..do you still let it rest? i only let mine rest less than 30 min, more like 15.  i've read things that say 30 to 60 minutes, some say 15 minutes.  but the meat still cooks when it's like that, so i didn't want to keep overdoing this.  but...

    First attempt at smoking turkey

i am still not sure what temps i was using.  the air thermometer i think was just over 200 for the "accurate" temp, when the brinkmann lid said the low end of the ideal range.  it stayed in that low to middle ideal.  it started out on the hot side but i knew it wouldn't stay there too long.  so...

    First attempt at smoking turkey

guess it's better to use non-flammable things around the smoker...and to keep it upright.  i figure my meat thermometer was hitting an air pocket.  when i sat it back up, i checked for that and i saw it.  accidentally melted the bottom of one thermometer so now i'm down to one again lol.  the...

    First attempt at smoking turkey

What is causing my thermometers to flash between a reasonable temperature and then something closer to the air temp?  I thought it might be touching an air pocket instead of meat but I've moved it around several times.  I have two chefmate probe thermometers.  The one in the meat I have used...
