    Added 1 Indonesian vanilla bean to some vodka and let it sit for a week before adding it to the keg.  Roasty, a little sweet, vanilla, woody & robust. I added some move vodka to the vanilla bean and keeping it on hand incase I decide to add more.

    Tossed 2 more in yesterday and really watched the temp and time.  Pulled them out at 165 and they turned out better than the first time.  More juicy, flavorful, and took the applewood very well.

    Thanks.  Glad to share.  Wish the pics could be better but was under pressure from family trying to dig in.  Brisket was a little dry till about 1/4 of the way in.  My wife's Grandfather brought some homemade BBQ sauce and his recipe!  Starts sweet with a lingering bite at the end.

    First time smoking a Pork Butt and was going to have it go overnight.  Got pretty damm cold 17F but smoker stayed between 220-260 all night. John Henry's Pecan rub on pork and my homemade on the brisket.  This was the most nervous one yet, but it was only number 2.  ET-732 was a GREAT buy...
