Added 1 Indonesian vanilla bean to some vodka and let it sit for a week before adding it to the keg. Roasty, a little sweet, vanilla, woody & robust. I added some move vodka to the vanilla bean and keeping it on hand incase I decide to add more.
I halved this for 2-3 turkies and used splenda to cut sugar a bit.
1/2 cup granulated sugar
1/4 cup garlic salt
1/4 cup celery salt
1/4 cup paprika
1 Tablespoon chili powder 1 Tablespoon freshly ground black pepper
1/2 teaspoon cinnamon
1/2 teaspoon cumin
1/2 teaspoon dry mustard
Mix all...
Tossed 2 more in yesterday and really watched the temp and time. Pulled them out at 165 and they turned out better than the first time. More juicy, flavorful, and took the applewood very well.
Thanks. Glad to share. Wish the pics could be better but was under pressure from family trying to dig in. Brisket was a little dry till about 1/4 of the way in. My wife's Grandfather brought some homemade BBQ sauce and his recipe! Starts sweet with a lingering bite at the end.
