    Question on the fatties

    When I've put hash browns in a fattie, I cook them first.  The only thing I don't cook first is the veggies.  Good luck and enjoy!

    HELP - Dried Beef looks stinky

    I've had that happen, it seems like it's just how the cure penetrates the meat.  I've notice the brown on the outside from soaking in the brine.  I never looked at the inside before i've cooked it and it's always come out fine.  Maybe it was too thick.  Did the vendor say anything about...

    Back to smoking from many years off. Un-modded Brinkman, ended up with shoe leather meat.

    I have the Brinkman too, and haven't done much for mods either.  I know from using external thermometers, the ideal heat is closer to 300 versus the 225-250 range.  I know it would depend on the size of the cuts, but only cooking for 6 hours, I'd be surprised if the meat got warm enough to be...

    Mag1 from Cheese Head Land

    Questions for a PP party coming up.

    I've made pulled pork ahead of time, and then put it in vacuum sealed bags.  Then to reheat, just throw the bags in boiling water to get it heated back up.  The sealed bags keep in all the juices and like dirt said, no stress the day of the party.

    Chewy Brisket Point (Q-view coming soon)

    Make sure you wrap it in towels and let it sit for a while too.  I did one a couple of weeks ago and part of it, I only let sit for about 20 minutes and it was chewy.  The other half I had sitting in foil and towels for another 25 or 30 minutes and that one was much more tender.

    I've done the boneless skinless breasts before, and I wrapped them in bacon, but the outside that didn't have the bacon touching it was really tough.  The inside was nice and moist, but the outside was a real turn off.  Is there something you could wrap them in or put on the outside that...

    Marked down Oklahoma Joe-opinions needed!

    Well I didn't get much feedback, but for the price, I pulled the trigger.  This thing is a monster.  Took 3 of us to get it in the back of the truck.  Now I'll be reading up on mods needed.  It was already assembled, so I'm sure I'll have to do some taking apart and reassembling.

    Marked down Oklahoma Joe-opinions needed!

    I just saw an Oklahoma Joe marked down from 499 to 348.  The other smoker I was considering was the 22.5 WSM.  I know for a charcoal smoker, then WSM will be much less tending, but the 2 racks is a bit of a hassle too.  Right now I have ECB, so either one will be a huge step up.  Let me know...
