    ALL DONE.... pulled it to seperate the point and flat but both were at the same temp, 200 snuck up on me fast. Still it seems to be perfect as seen in the "chefs sample" 2nd picture....

    Just my 2nd Brisket but first on my new smoker ( build thread under "other builds" called the "one tom monster) ... I have 22 of them to do for a friends company picnic next week so this is "practice". It's been on for 8 hours now. The pic was taken at about 3 hours in. More pics to come...

    The Smoker is working great. It's easy to maintain temp once a good bed of coals is built. The only thing I found that I need to do is add a plow disk under the bottom rack. I will put it with the dome up so that the drippings run off and into the bottom of the smoke box. Right now they are...
