Sorry I never responded. I have 4 temp gauges. 2 at grill level and 2 digital inside. The temp was right. Looks like I had airflow issues. I fixed it soon after the post, shoulder turned out great.

I have the Char Broil Silver smoker. Its fairly well modded up. Lowered the chimney to grate level, I have the baffle, and tuning plates extend about 3/4 the length of the bottom. For the life of me I cant get the internal temp to go above 225 or so. Even with those mods in place I am seeing...

I used the ECB throughout the winter here in Upstate NY. I just had to babysit the smoker more. I was adding lump charcoal from my chimney every 2 hours or so. I dont even have a ton of mods on that unit. Id shake out the ash so that the fire was hot, but I could hold 230-260 for most of a 5...
Is there any value to putting lava rocks to help disperse the heat better? My steel baffle and plates are much thinner than this. I planned on putting a water pan as close to the baffle as possible and then putting stones towards the end. Waste of time? Im concerned about hot spots...
