I made up a batch of breakfast sausage this weekend using two large Picnics. Ended up with the 2 fairly large bones after boning out the meat and was curious if anyone has a use for the bones. There is probably 1/2 lb. or so of meat total, so doesn't seem worth trying to smoke them, cure like a...
Thanks for the heads-up. I ordered one this afternoon.
I've only used a grinder for stuffing up to this point, so looking forward to having an actual stuffer to try out.
After a little reading up with some suggestions from others, I went with Auber Instruments for the PID. Been working great for almost two years now and I'm very happy I went that route.
I will also be looking forward to your sausage write-up as well as the review on the meat mixer. Your issue #1 - is cleanup worth the effort - is one of the things I keep thinking about everytime I start to purchase a mixer. Most of my batches are in the 15lb to 25 lb range, and it seems like a...
Here you go. I cleaned up the wiring today and except for possibly adding a heat sink to the relay it is pretty much finished. I may look at making some racks to hold the drip pans a little lower down to free up more room for sausages. You can see that the inside has started to darken slightly...
OK, I thought I would give one last update on the smoker. After quite a learning experience, I have gone back to my original idea of a "MES40 Clone" type smoker. Many thanks to Flyweed for the info on PID controllers. I bought the parts from auberins.com (thanks also to whoever it was that...
Didn't mean to leave anyone hanging there... ribs turned out very well, but didn't take any pics. Had what was left for lunch today as well.
Thanks to quite a few folks here who have helped with all my questions. I've decided to go with electic using a PID controller and for now I'll try wiring...
I have a 1 inch diameter hole at the bottom left of the smoker, and two 5/8" diameter holes spaced apart on the top. I'm thinking the lack of airflow may have been what caused the propane burner to keep going out, but not sure.
OK, finally fired her up today on the patio, with mixed results. Here she is ready to go this morning:
The propane burner worked really well and would quickly heat up as expected. It also probably helped that even at 10:00am when I started it up it was already 90 degrees in the shade on my...
Thanks for the info on covering the pan.
Todd - do you think the 6x6 or 6x8 amazen would be better in this application? Is this difference between the two purely the duration, or does it have to do with the amount of smoke (volume of smoker) as well? I've seen some info about your product and...
