    You guys are great. Thanks so much...One more question.  I'm cooking for a church function in 3 weeks.  Is it better to pull and freeze or freeze whole and pull after re-heating.  thanks again.

    Top 2 butts were fine. Bottom 2 butts took about 15 min beyond 4 hours to get up to 140 degrees.  Can they be used??  thanks

    I have four 8# Butts in the WSM and at 4 hours from 40 degrees I'm reading 136 in the larger butt.  Is it safe to go on?  Thanks in advance.  David

    great feedback..sounds like I need a thermometer.. I'm looking at a Maverick ET-732 from BBQ-Guru and bracket eyelets to avoid drilling this young smoker...Noticed that the ET-732 probes won't fit through the  1/4" eyelet holes.  Is there another good thermometer that reads both cooker and meat...

    1st time smoking and using WSM.  Started with 3 nice baby backs..used "rudimentary rub" in Low and Slow cookbook...paprika, black pepper, salt, garlic powder, onion powder.  Rubbed ribs with prepared mustard before spreading on the rub.  Started with Kingsford coals 3/4 filled coal holder and...

    new smoker

    just received my WSM and would like to purchase a Maverick ET-732 thermometer.  Silly question...the wires of the tranmitter/probe will pass under the lid?  Won't this damage the wires if they're crimpted under the lid of this heavy smoker?
