Thanks for the Spatchcock advice. It worked very well. In fact, it worked too well. Since I was concerned about the bacteria issue, I smoked it at 275 degrees. It was windy and maybe 55 degrees. My temperature inside seemed to hover around 240 to 250. I planned on 7 to 8 hours but the bird...
Going to try the Slaughterhouse recipe. But what temperature and how long? I will be doing a 20 pound turkey. (I know....Its big but that is what my momma thawed) I will use a thermometer as well, but I'm trying to plan the time.
Edited to add: I now have been reading that I can't do a...
Buying an MES today. Hope to season it tonight. Cook chicken on it tomorrow, but then a Turkey on Sunday.
I need a good recipe. I need a brine. I need a good rub. Cook temp and time. (I will also use a meat therm). Spritz?
PS: Recipe can't be too spicey. Mom has a weak stomach.
What...
OK, now convince me NOT to buy the MES. Speak now or forever hold your peace. I plan to buy one tomorrow. Also, should I buy the extended warranty? ($29 I think) I know they are usually just a scam, but I worry about the electronics on these.
OK, narrowed it to this. 1) Master Forge Propane (has great reviews) 2) GOSM propane (most here like it) OR 3) MES electric. Looks like people are cooking Turkeys in the MES. What are your opinions as to these narrowed choices?
I have a Little Chief that has worked well but for many dishes I have to finish in the oven. I want something that will do ribs, turkey, etc without the oven.
I don't want to tend things much so I am leaning toward propane or pellets. I am also very frugal. I can get a pretty decent propane...
So 35 to 50 hours. How long would you cook say....two racks of ribs? Thus how many meals of ribs can I get out of one tank? My ignorance is due to the fact that I have an electric and usually cook partly in the oven.
This is my second post. I posted in the electric smoker section and the replies led me here. I have a Little Chief smoker that does a decent job for fish and jerky but other items I usually have to finish in the oven. Thus, I'm looking for sustained temp of 225 to 275.
1) How expensive are...
OK, I'm open to Propane as well. I just thought propane would be more expensive to run. What do you guys say?
Will any of these be an improvement over my Little Chief? I'm not too concerned about a smoke ring as long as the taste is there. It would be nice to do chicken and turkey without...
I have a Little Chief Smoker. Works great on fish but I usually cook ribs and turkey legs in the oven and then smoke them for an hour or two for the smoke flavor. Can my smoker get hot enough to do the whole thing without drying them out? My buddy has a Green Egg and can make fantastic...
