Good luck with that! Family are always the best guinea pigs for a new smoker. Your mods sound good. And the worst thing that happens is you have to eat "okay" smoked meat (which is still better than any other meat!).

I definitely like to use the juice in the pan sans the fat and put it in bags as well. It warms it up and the bags seal in the moisture instead of losing it to the microwave.
Smoked Mac and Cheese is where its at! I saw that post on here and thought, that just sounds like it needs to be done. I don't know if I can ever eat regular mac and cheese again...
I have never smoked cheese on a grill. I live in Florida so cold smoking here is not so easy without a freezer. I use a chest freezer that I installed racks in. How do you cold smoke on a grill like that??
