Thanks. I didn't know if there was some health issues, but if I make them in the oven i kind of thought there would not be a problem. The meat was 60% venison and 40% pork. I will make sure they get to 152 degrees
Used cure #2 instead of cure #1 in a venison recipe. Do not intend to smoke or dry cure but to do in oven at 170 until internals raise to 152. Any problems or health issues with this?
