    The-Eggs-R-Done

I made these, let them sit 10 days, I didn't use the sugar, but mine taste great but they didn't take on that red color like yours, do you think the sugar has something to do with that?

    Scarbelly Wings (Buffalo Style)

Hmmm, would have never thought to inject wings, I like the idea of less sloppiness and the crispy skin. This is on my "got to try it" list.

    Smoked Spoonbill

Well, Spoonbill are all cartilage, no bones just the head, fins and the spinal column have the cartilage, the fillets are all meat, no rib bones etc. Smooth skin like a catfish. Bleeding them out through the gills like that sounds interesting. The way we do it is get them hung up as soon as...

    Smoked Spoonbill

Well, I had this giant fish to do something with and I personally don't like spoonbill. I had tried everything. I tried searching my favourite Smoking sites for some ideas and didn't find allot so here is what I did: Not a whole lot different than Salmon, I brined it for about 36 hours with a...

    Rainy Day Ribs

The food looks great, but I really dig that pepper grinder! I've never seen one like that.

    Cast Iron Electrolysis Rust Removal

Has anyone tried this with the "pre-seasoned" cast iron? I got a new pan and the coating is already starting to show bare metal in a few spots after a couple uses and cleaning (hot water and a dish rag, no soap or abrasives). I'm going to try it, just wondering if anyone has yet. My goal is to...

Two Christmas birds went without a hitch!

First, I apologize for no pictures, it was a busy day. I smoked a couple of 13 lb turkeys on my UDS today and everything went perfect! Thank you all of you for all I have learned here. I learned patients, preparation and practice. I can't show you what it looked like, I really wanted some...

    First time smoking pork shoulder...

I like the snow! Everyone thinks I'm nuts for cooking outside on a day like this, glad to see I wasn't alone. I haven't tried the picnic roast yet, cheaper around here, how did yours turn out?

First Spare Ribs and Large Pork Butt

Now I know why Jeff said to "enjoy pulling the bone out". Mmmm that pork butt turned out great, it came right apart with little effort. The wife didn't want the ribs, but she went back for seconds on the pulled pork, that's a good compliment to me because she doesn't even care for pork :) No...

First Spare Ribs and Large Pork Butt

Thanks for the compliments.  I was going to do the 3-2-1 thing with them, but it was more like 2 1/2-2 1/2 and they were pretty done.  I am certain that my thermostat on the UDS is reading low.  The last few smokes went a lot faster than I had planned.  Next time with the ribs, I'm going to cool...

First Spare Ribs and Large Pork Butt

I didn't put them back on for the hour out of the foil, they were plenty done as you see the bone fell right out when I tried to move it around. I had to sample them. I ate that whole rack!!
