In my analogue model, I put the AMZN in a shallow aluminum pan and put it on the left on top of the water pan. I put a deeper aluminum pan over it on the first shelf and use that as my water pan. Even if I'm not using water, this pan keeps meat drippings off the smoker. The other 2 shelves...
I have both the Smoke Pistol and an A-MAZE-N. Ditto to post #8 from Bearcarver. His experience with the Big Kahuna is the same as I've had with the Smoke Pistol. It takes LOTS of attention to keep it going. It does seem to put out WAY too much white smoke, altho I have not noticed an oversmoked...
I'm not a hunter and I donate to Animal Humane Organizations. But I have no problem with SPORTSMEN (and women) harvesting animals for food. Wildlife management is important to have a healthy, sustainable population.
I DO have a problem with those that go out and take potshots at everything...
Cornbread stuffing is all I ever make anymore. I think I'll try your recipe this year. I like the idea of Andouille. Thanks for posting it. I add a whole lot more sage than you do, though.
Good idea! I've not used them that way before because I thought they would burn up too fast in a regular smoke box. Now I'm wondering if you added some here and there in the A-Maz-N Smoker what the effect would be.
