Thought I'd smoke a nice beef roast for Mother's Day rubbed it with chilli powder,garlic powder,onion powder and black pepper. Wrapped it in plastic wrap and left it in fridge overnight.

I have a FoodSaver Vacuum Sealer it does a great job of sucking out the the air and sealing against freezer burn it would be a wise investment to get one they have so many uses other than using for food.
I have heard that when you are going to smoke cheese that you should cut a slice off of all sides so that the smoke can penatrate through the cheese better has anyone else heard of this if so is it true or does it really matter. Thanx From Alien
