Update. My oven has been on the fritz so I worked on it and to test it I wrapped "rib failure" in foil, fired it to 350 for an hour. Put about a 1/2 cup of water in it too. That made all the difference. So here is my dilemma. I really was hoping to do them without wrapping. Can it be done? Will...
More data: St. Louis style rack. CSM is a Chinese SJ Longhorn combo with some mods. Monitored grate temp with Mavrick 732. Never monitored or checked meat temp. Interestingly enough the stock thermom was very close.
Thanks! So maybe the temp should be higher say between 225-240? and maybe 4-5 hours? But what about the shoe leather bark. Was that not cooked long enough?
Second rib failure. Used a combo of kingsford brics and mesquite chunk. Trouble keeping heat under control at times. Generally was able to keep between 225 and 235.Total time approx. 4hrs in smoker. Used water pan. Sometimes dropped to 219 for very short periods. Great tasting bark, somewhat the...
OK, I finally got out and measured the baffle's I use on the SJ Longhorn smoker side. Truth be told I have not been very successful with hot smoking. Ribs only and those needed finishing in the oven:( But cold smoked cheese is GREAT!
The angled baffle is ~ 19" x 7 1/4". It is about 3" on the...
I am considering getting some GrillGrates for my Longhorn Combo. The sizes offered will need some cutting but I wondered if anyone has tried them on the SM Longhorn Combo?
Thanks! I know when I go fishing I spend about $30/lb for them but that's because I usually go fishin, not catchin!. I do have a good supply of mesquite so we'll try that too. I will keep the stack open! Thanks for the wood source! BTW I found that the COS/Combo has a hidden benefit. I did some...
Thanks much for the responses! I tried some country ribs last night with mixed results. Followed Malcom Reed's lead with 1.5hrs at 275' and 1..5 covered to braise. Tasted great but dry and tough. I used one chimney of brics and added several lumps of mesquite. I had trouble getting to and...
My son welded a charcoal basket (14x12x6), for my OK Joe Combo and I could use some help from those more experienced than me. I would like to use a combination of brics and lump. My thought is to fire up a chimney of the brics, dump in the basket and add unlit lump to fill the basket on top. Or...
Well, just goes to show that when you least expect it, something good happens! Just a bit of an update: First smoke was actually ribs. Had some trouble maintaining 225. I wanted to hover around 235 and I did add additional charcoal but to late so temp went down for about 15 minutes to about...
Update! The temp got a bit warm so the cheese drooped a bit! Did one block of cheddar and one block of pepper jack. After two hours I pulled the cheese, wiped oil off, wrapped and put the cheese in the fridge! Waited a few (really long) hours and then tried it. Gooood! Well worth the time. The...
Thanks very much for the response dirtsailor! I wasn't sure if everyone was waiting for me to figure this out on my own or if everyone was out tending there smoker. Everything seemed like it should work so I went to the simplest thing I could do, Microwave the pellets. Since it is monsoon season...
I should have listened but I had to get one anyway. Todd said I would have trouble keeping the Tube Smoker going in an offset smoker but I thought I would try one anyway. Well here I am red faced looking for advice from anyone that has also tried this but was inventive enough to overcome the...
Happy birthday to you! Mine also (finally reached 65). Nice cutting board, that should handle some serious meat! Is that vac actually ash specific or a wet dry? What is the brand?
Good responses. I know that others have used similar sealers and have not reported any ill effects but then asbestos was used in clothing too. So I do intend to season the smoker at a reasonably high temp for some time to insure that the sealant is well cured but one never knows.
Regarding the...
Take this with a grain of salt since I don't have experience with a diffuser plate yet. I just finished one and will try it tomorrow. Aluminum is used as a heat sink (stores to dissipate heat and as small as your foil plug is it may be enough to transfer additional heat on the fire box side. I...
Thanks for the quick response. I forgot to mention that I also used nomex on the smoke door. I kept it full width. It also worked somewhat but will require some tinkering. I actually have less gapping on the smoke box lid but the gap around the smoke inlet is not impressive. Not quite sure how I...
