Okay, no gunk on the sensor, but the reset did the trick. There's still a 15 deg differential from probe to thermostat, but that's within reason.
My question is, will this happen often? If I have to keep checking to make sure the thermostat is working it defeats some of the "set and forget"...
Is the A-Maze-N-Smoker just for cold smokes, or do you use it instead of the chip tray for BBQ? If so, is it just for the greater unattended time, or is there another advantage?
Hmm... there's a thought. Although I'm not sure how gunk would make it read hotter than it is. I would think it would do the opposite. But I'll check it out, along with the reset tip.
Last week I got a Sams Club MES 40. I proceeded to try my first cook with a brisket and two pork butts.
Everything was rolling along great. The brisket got to temp first and I pulled it out. Then for hours the pork didn't seem to rise much. Finally the temperature of the meat actually dropped...
I make a paste out of garlic, fresh rosemary, onion, salt, pepper and olive oil. Slather some of that on there and marinate for an hour or so (I use the foodsaver thing too, though I'm not sure how much difference it makes).
